In this restaurant where gastronomy and harmony go hand in hand, chef Rémy Simon cooks up his personalised, contemporary cuisine using fresh market produce. Flavours from here and elsewhere are combined to produce the very best. To accompany the delicious specialities of the region, such as the “Astet najacois” (stuffed pork roast), semi-cooked duck foie gras or Aveyron veal pavé steak, Corinne Simon offers a wide selection of well-renowned wines from the region: Gaillac, Cahors, Marcillac, Jurançon and many more. This gastronomic table in the heart of the Great Sites of the Midi-Pyrénées area is open seven days a week lunchtime and evening from 20th March to 11th November, and then only at lunchtime from 14th November to 31st December (except Wednesday and December 25th).
